Meatloaf Monday

Today was the monthly lunch at church that I help out with and on the menu was Meatloaf. I have only made meatloaf a few times and it has been passable, but not great. I did make one with chipolte peppers and chirizzo that was very good. But today's meatloaf was perfect. It tasted like five star restaurant meatloaf (if they served meatloaf in five start restaurants that is). Lynette's recipe was so yummy, I wonder if she will give it to me?

The weekend was so fun! I got to do some of my favorite things! (Translation: attend parties)

On Friday was the Vestry party. David just finished serving three years on the Vestry and we were guests at a great party for the retiring and incoming Vestry members. The food was amazing, the wine tasty and best of all was the company. I just love a house full of people sharing a meal and good times.

Saturday, we met our friends at Chick fil A and then went to frost cupcakes. Then it was prep time for the SuperBowl party. We rearranged the house, set up all the tables and cleaned.

Sunday I had nursery duty at church. I just love playing with the little lovlies. I made Miss Sadie laugh with my frog impersonation RIBBITT :) We danced, had snack and colored.

Sunday evening we welcomed all our friends over to watch the SuperBowl and enjoy some nibbles. Again, a house full having a great time. I just LOVE a party.

Of course you know the Packers won, but I have a scientific way of choosing which team I root for. Whichever team has the best looking quarterback is the one I want to win. And in my opinion, Greenbay's quarterback was cuter. :)

David wasn't feeling well today and had to stay home. I hate it when he is sick and I can't do anything to help. I did bring him home some meatloaf and coconut cream pie (just what the doctor ordered for an upset tummy right?)

The rest of the week is busy for sure. Tomorrow I get to babysit for my friend Christy and then I have a meeting to learn all about student teaching (So excited and terrified that in a few short months, I will be in front of actual students YIKES) Then on Friday I get to keep sweet Sadie for Sarah. Yeah!!

Thursday I am going to take Emily and meet up with my dad to take my grams to lunch. She is having a birthday this week, turning 80!

We are supposed to have more yucky weather and I must say that I am really longing for spring. This weekend I wore the brightest yellow and coral shirt. I am not sure if I like it or not, but it reminded me of spring and it was so loud I sure wasn't going to get hit by a bus wearing it. That silly groundhog didn't see his shadow, so we should have an early spring, but I found out he is only right 39% of the time, not good odds.

PS: Terry, all i did for the raspberry jam was take fresh rasberries, sugar and orange juice and bring to boil on stove then simmer till reduced. It got jammy all on its own and has a very bright rasberry flavor and happy color to boot. :) Not sure how to tone down the tartness, but I like it that way and it is great on bagels and english muffins.

  1. Hey girlie...you are one busy lady! I love living vicariously through you. Sounds like you had a fun-filled weekend with everyone.

    Sorry to hear David is sick. The bug is bad this year.

    I am so excited for you about your upcoming teaching experience. You will be the most awesome teacher, shaping the lives of our little future presidents, office managers, and chimney sweeps....

    To cut the bitter from a tart fruit - try a little salt. Salt brings out the sweet and tames the tart. You can also add a touch of vanilla - or for raspberries, I use a little bit of Smuckers Boysenberry syrup. I make my own Monte Cristo dipping sauce with raspberry jam and Smuckers boysenberry syrup (specifically to calm the tartiness).

    Love you soooooooooo much and miss you more than you can imagine! Cannot wait for the next family function!

    I am going to be certified to teach 4-8th grade but I am hoping to stay more 4th,5th or 6th grade. 7th and 8th graders scare me. :)

    Kim, thanks for the info on adding salt to the rasberries.

    More Meatloaf.
    I bought an extra pan of meatloaf and brought it home. We ate it for supper that night, and again tonight and I froze two more portions for future meals. I paid ten dollars for the pan, so the cost per meal was $2.50 a bargain for sure.
