Waste not, Want not

We celebrated our new year quietly, just the two of us and it was nice. Emily had a great time at her grandparents, but she did have some trouble sleeping away from home.

As I mentioned earlier I am trying to cook at home and avoid eating out. Well I have made some really yummy meals. Pot Roast, Bean Soup, a yummy salad, and a couple others. The thing is that we always have left overs and we NEVER eat them. I am always throwing them away. Well I did better this week.

For lunch today I took left over Rotisseri chicken and whipped up some lunch fajitas. For dinner tonight I took left over Pot Roast and turned it into BBQ beef on hoagie rolls. I guess I just need to figure out how to change the leftovers into something else then we will eat them. It was nice to save some money and not waste food.

School doesn't start until next week, so this week I am helping out at the office. I am trying to be more mindful of my time and not be wasteful. I think I am off to a fairly good start.
