Cookapalooza

This past weekend was my last weekend before student teaching. Emily went her Grammie and Pop-pop's house so I used it as an opportunity to get some cooking done in preparation for going to work.

I found an article in my Rachel Ray magazine that shows how to cook one day and get a month of meals. Armed with my grocery list, I got my shopping on and came back loaded with lots of meat and fresh produce.

I didn't get it all cooked in one day, but I now have a freezer full of food to help me. Here are some pics of the Cookapalooza.

So far I have made a Pasta Dish with Shredded Chicken and tonight I made a spanish rice dish with shrimp. I like the idea of getting ahead like this and the recipies make enough for me to be able to pack my lunch for the next day. Yeah for me.
